Tasty, complex and ultimately satisfying, our inaugural Pinot Gris has a complex nose of honeysuckle, cantaloupe, and pear fruit. The palate is full and complex, with hints of apricot, melon, honey and balancing acidity in the finish. Partial barrel aging gives the wine extra weight and a creamy texture.
Fruit for the 2006 Pinot Gris was harvested between September 17th and October 7th from several vineyards in Ontario. The wine was fermented at cool temperatures averaging 12˚ C to preserve fruit character in a combination of 80% stainless steel tank and 20% French Oak barrels. The result is a blend of barrel fermented, barrel aged, and stainless steel. This is a Pinot Gris that is reminiscent of the classic French style from being continuously stirred on the lees during ageing for added mouth-feel and complexity. The wine was bottled July 3rd 2007.
This wine is delightful now but will continue to develop through 2008.
